Where it all comes from

Two places shape everything here: a little island in the far north where our kombu grows, and the Tokyo market where Sakasyu has picked seafood since 1889.

01 — Rishiri Island, Hokkaido

Where our kombu grows

A small volcanic island in the cold, clear sea off the northern tip of Hokkaido. Its wild kombu is the one chefs reach for when a dashi has to be perfectly clear, and ours is aged for three years. It is the heart of our whole Wild Kombu line, from sushi soy sauce to sea salt.

02 — Toyosu Market, Tokyo

Where we pick

Tokyo's great fish market, and home to Sakasyu's own shop. Our team works the market floor every morning, and the same people who choose fish for top sushi counters across America choose what goes in this shop.

The Sakasyu story

SAKASYU has traded seafood in the heart of Tokyo for more than 130 years. Today the same eye that picks fish for the best sushi counters in America picks every item in this shop.

  1. 1889 日本橋

    Founded in Nihonbashi

Shizuo Sakai opens Sakasyu in Nihonbashi, where Tokyo's fish market stood before Tsukiji. Our story is older than Tsukiji itself.

  2. 2017 アメリカ

    US Sakasyu begins

Yoshimichi Takahashi brings Sakasyu to the U.S., flying seafood from Tokyo to sushi counters in San Francisco, Los Angeles, Honolulu and New York.

  3. 2018 豊洲

    Into Toyosu

Tokyo's fish market moves to its new home in Toyosu. Sakasyu runs its own shop there and trades on the floor every morning.

  4. Now 台所

    Into your kitchen

US Sakasyu Online brings that same Toyosu eye to home cooks: kombu from Rishiri, katsuobushi, nori and the sauces we love.
